A delicious way to eat roasted beets! One of nature’s wonder vegetables. Perfect year round as a side dish or addition to a great salad. Great with Maple Mustard sauce or by themselves!
Beets are one of the most underrated vegetables. They are beautiful in color and can be sweet or bitter depending on how you cook them. Red beets specifically are VERY easy to find are typically pretty cheap. I bought Organic Red beets in a bundle of 3 for just 2 US dollars at my local grocery store.
Another awesome thing about beets is their nutrient content. Beets are very high in potassium, iron, and fiber. Plus, there has been lots of research about their qualities in lowering blood pressure! Dr. Michael Greger does a good job showing the data here in various videos.
As a testimonial, I can confirm that when my blood pressure is high, and I drink 4oz of beet juice, my systolic blood pressure drops 10 points in a matter of minutes.

SIMPLE Roasted Beets with Maple Mustard Sauce
Ingredients
For the Beets:
- 3 medium raw red beets
- ½ cup vegetable broth
- 1 tsp thyme
- Salt and pepper to taste
- 1 green onion optional
For the Sauce:
- 2 tbsp. Yellow mustard
- 2 tbsp. Maple syrup
Instructions
- Preheat oven to 400F.
- Wash beets thoroughly using a vegetable washing brush or your hands.
- Slice beets into rounds about ¼ to ½ inch thick
- Place beets onto parchment lined baking sheet. Brush vegetable broth on both sides and sprinkle with thyme, salt, and pepper as desired.
- Bake on center rack in 400F oven for ~30 minutes.
- While the beets are baking, mix together equal parts mustard to maple syrup for sauce.
- Thinly slice green onion and set aside.
- Once beets are crispy around the edges and fork tender in the middle they are done!
- Drizzle maple mustard sauce and add green onions for garnish.
- Serve warm as a great side dish!
Notes
Freeze up to 1 month in sealed container.
*Optional: if wanting to use oil, brush on in place of vegetable broth.
*Golden beets will perform the same way.
